Pizza tomato sauce: a simple homemade recipe

Pomidorų padažas picai: paprastas receptas namuose

When making pizza at home, we pay the most attention to the dough - the type of flour, fermentation, oven temperature. However, there is one element whose impact we feel in every bite: tomato sauce. It is precisely what gives pizza its fresh, mildly sweet and sour taste, balancing cheese and crispy crust. In this article, you will find a simple recipe for pizza sauce made from canned tomatoes, tips on how to choose the right tomatoes, and the most common mistakes to avoid.

Why tomato sauce determines the taste of pizza

The taste of pizza is created by several layers, but the sauce is what we taste first. It performs two important tasks: it provides the freshness of tomatoes and balances the fatty cheese and heavy bite of the dough.

A well-prepared sauce not only enriches the taste, but also helps the dough bake evenly. If there is too much sauce or it is too runny, the crust can become soggy and lose its crispiness - one of the most important characteristics of homemade pizza. Therefore, it is worth spending a few minutes not only on the dough, but also on the sauce.

Which tomatoes to choose for pizza sauce

The best base is whole peeled canned tomatoes, often called “pelati”. They ripen in the sun, so they are sweeter, less acidic, and naturally thicker than crushed or puréed tomatoes. These are precisely the tomatoes considered the standard in Neapolitan cuisine.

When choosing, it is worth paying attention to the ingredients: the fewer additives, the more freedom you have to create your own taste. Tomatoes that already contain garlic, sugar, or spices can be convenient, but you will no longer be able to control the final result. In addition, use real olive oil - it gives the sauce a mild fruitiness and does not overpower the tomatoes.

A simple recipe for pizza sauce

This recipe takes only 10 minutes and, contrary to popular belief, does not require cooking. The result is a fresh, vibrant sauce that pairs perfectly with any cheese.

You will need: 400 g of whole peeled canned tomatoes, 1-2 tablespoons of olive oil, a pinch of sea salt, a few fresh basil leaves, and, if you like, one clove of garlic.

First, drain the tomatoes from the liquid in which they are canned. Then crush them by hand or with a fork - do not use a blender, as overly finely blended tomatoes release more liquid and make the sauce too runny. Mix in the olive oil, salt, and torn basil leaves.

Let the sauce sit for about 15 minutes so that the flavors can meld. If you want a thicker sauce, you can briefly heat it in a pan over medium heat until it thickens slightly, and let it cool completely before spreading it on the dough.

The most common mistakes when preparing pizza sauce

One of the most common mistakes is using too much sauce. According to authentic Italian tradition, pizza should not be drenched in sauce; a thin, even layer that does not cover the dough is enough. A little sauce means a lot of flavor, not a lack of it.

Another mistake is runny sauce. Before spreading the tomatoes, drain them and do not cook them for too long, otherwise the sauce will lose its freshness. Also, avoid too many seasonings: tomatoes are the main star, and salt, olive oil, and basil only enhance them. Finally, do not forget that the sauce should be spread at room temperature - cold sauce can disrupt even baking.

How to adapt the sauce for different pizza styles

For Neapolitan-style pizza, use a small amount of fresh, unblended sauce - just a couple of tablespoons, so that the crust remains moist and fluffy. Caputo Type 00 flour is perfect for such a pizza, as it makes the dough light and elastic.

For New York-style pizza, the sauce can be slightly thicker and gently cooked so that the taste is richer. For Sicilian-style or pan-baked pizza, use a thicker layer, which becomes more intense and sweeter while baking. In all cases, quality olive oil brings all the layers together into a harmonious whole.

The pleasure of homemade pizza is that you control everything yourself - from the dough to the final basil leaf. And a good sauce is the simplest way to take your pizza to a whole new level.

If you want to save time when choosing ingredients, the “Pizza Night Box” combines everything you need for the dough and sauce - flour, tomatoes, yeast, and olive oil - in one place. Just add your favorite fresh toppings and enjoy authentic Italian pizza at home.
